Make a low-carb wrap out of a one-egg omelette and slather it with salsa for a low-carb alternative to a flatbread or sandwich. Vegetarian snack that is quick and easy to make.
INGREDIENTS
1 large egg
a small amount of rapeseed or olive oil for frying
2 tablespoons tomato salsa
1 tablespoon fresh coriander
OMELETTE ROLL-UP RECIPE
1. Beat the egg with 1 tbsp water. In a medium nonstick skillet, heat the oil. Cook until the egg is set, swirling it around the pan's base as if making a pancake. It is not necessary to turn it.
2. Place the pancake on a board, spread with the salsa, and sprinkle with the coriander before rolling it up. It can be eaten warm or cold and can be stored in the fridge for up to two days.
