INGREDIENTS
1 teaspoon coconut oil or butter
1 cup macadamia nuts, pecan halves, or walnut chunks
1/3 cup raw pumpkin seeds (pepitas) or raw sunflower seeds, shelled
1/2 teaspoon Berbere spice mix
1/8 teaspoon sea salt
3 tablespoons cacao nibs
1 tablespoon hemp, flax, or chia seeds
KETO MACADAMIA NUT AND PEPITA TRAIL MIX
1. Melt coconut oil in a medium saucepan over medium-low heat. Mix in the nuts and pepitas. Cook for 2 minutes, stirring constantly. Season with salt and berbere spice combination. Cook and stir for another 1 to 2 minutes, or until the nuts and pepitas begin to turn golden brown.
2. Remove the pan from the heat. Add the cacao nibs and hemp seeds and mix well. Remove from the oven and cool fully on a clean paper towel. For up to 2 weeks, store in an airtight container.
Berbere spice blend is an Ethiopian seasoning created of dried red chile peppers and spices like cardamom, coriander, cloves, allspice, fenugreek seeds, peppercorns, garlic, paprika, and cinnamon. It can be found at a spice store or in the spice section of a supermarket store. Alternately, use 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, and a pinch of cayenne pepper. Alternatively, try five-spice powder or a garam masala spice blend.
