Make a delicious, protein-rich brunch or breakfast for two. This healthy omelette can be ready in 10 minutes and garnished with juicy tomatoes.
INGREDIENTS
1 teaspoon rapeseed oil
3 halved tomatoes
four large eggs
1 tablespoon chopped parsley
1 tbsp basil, chopped
HERB OMELETTE WITH FRIED TOMATOES RECIPE
1. In a small nonstick frying pan, heat the oil and sauté the tomatoes cut-side down until they begin to soften and color. Meanwhile, in a small mixing bowl, combine the eggs, herbs, and plenty of freshly ground black pepper.
2. Scoop the tomatoes from the pan and divide them between two plates. Pour the egg mixture into the pan and gently swirl with a wooden spoon to dislodge the egg that has set on the bottom of the pan, allowing uncooked egg to flow into the area. To allow it to set into an omelette, stop stirring when it's nearly done. Serve with the tomatoes, cut into four pieces.
