It can be difficult to find keto-friendly recipes, but it doesn't have to be. There are lots of meals that provide all of the flavor you crave while adhering to a low-carb diet. This arugula and grapefruit salad is intended as a side dish, but it can easily be turned into a full meal by adding protein and fat. We topped this salad with avocado and bacon, as shown, to make it even more wonderful.
Even if you don't follow the keto diet, this is a salad you should consider adding to your rotation. If you enjoy the sweet flavor of fruit in a salty salad, the grapefruit chunks in this recipe will satisfy you. Plus, with only 10 grams of sugar per serving, you'll enjoy some of that natural sweetness without going overboard on the sugar. When you combine that with the five grams of protein and three grams of fiber, you get a salad that is suitable for any occasion.
INGREDIENTS
1 grapefruit (pink)
arugula, 3 cups
4 thin red onion slices, split into rings
Creamy Ranch dressing (recipe below)
1 tbsp shelled roasted and salted pumpkin seeds (pepitas) or sunflower seeds
ARUGULA AND GRAPEFRUIT SALAD
1. Grapefruit should be cut in half lengthwise (top to bottom). Place one half on a cutting board, flat side down, and remove the peel and white pith. Remove the membranes from the citrus segments. Repeat with the other half of the grapefruit.
2. Divide the arugula across two salad dishes. Serve with grapefruit slices and red onion on top. Drizzle 1 to 2 tablespoons creamy Ranch dressing over each salad. Serve with pumpkin seeds on top.
Recipe for Creamy Ranch Dressing
In a medium mixing bowl, combine 1/2 cup mayonnaise, 1/4 cup whole-fat plain yogurt or sour cream, 2 teaspoons chopped fresh dill, 1 teaspoon lemon juice or cider vinegar, 1/2 teaspoon onion powder, 1/2 teaspoon sea salt, and 1 minced garlic clove. 2 to 3 tablespoons cream or whole milk, whisked in till desired consistency. Chill for up to 2 weeks in a bottle or jar with a cover. Shake vigorously before serving.
