You've probably seen the term "chaffle" floating about. Let me inform you if you haven't already. The "chaffle" is a waffle prepared with just two ingredients: cheese and eggs. Because it has no extra flours or sugars, it is the ideal waffle for the keto diet.
Even though the ingredients are the same as in a normal scrambled eggs dish, the texture is completely different. Spread some butter on top, add some syrup (or sugar-free syrup for keto-dieters), and you've got yourself a great low-carb breakfast.
So, if you're looking for some low-carb adjustments to add to your life, try this keto waffles recipe instead of the traditional waffle mix!
INGREDIENTS
two eggs.
a half-cup of shredded mozzarella
cooking spray.
HOW TO MAKE KETO WAFFLES
1. Turn on your waffle machine and set the temperature to medium. If your waffle iron has numbers, set it to the middle number. My waffle iron has settings numbered 1 through 6, and I found that the 3 setting produces the greatest keto waffle. A comparable waffle iron may be found here.
2. Whisk together the ingredients while the waffle iron heats up. Don't worry if the cheese still separates from the egg; it won't melt or anything. Just make sure the egg is thoroughly beaten.
3. Spray the waffle iron with cooking spray, then add the mixture. Make sure the cheese is distributed evenly throughout the waffle. The egg may not fill each quadrant immediately, but don't panic! It will fill in nicely during cooking.
4. Waffle makers typically have self-timers, which means they will sound an alarm when the waffle is done. When the timer goes off, open the cover and inspect the waffle. The chaffle will cook rapidly, but if the cheese is still melty and not crispy, close the lid and let the waffle machine cook for another round.
5. It may seem strange, but trust me! This waffle will taste great eaten like any other waffle—with butter and syrup. You could even throw on some fresh berries, which, yes, are also keto-diet approved.
