KETO STRAWBERRY MASCARPONE RECIPE

We all know and adore strawberries and whipped cream, but try adding mascarpone for a delightful Italian twist. Mascarpone adds creaminess, lightness, and a faint acidic touch to traditional whipped cream (the tanginess comes from the citric acid used to thicken this dessert-destined cream cheese.) Not to add that this is a keto dessert!

Because you are avoiding processed meals, high-carb foods, and sugars, satisfying your sweet craving and figuring out a low-carb dessert you can enjoy while on a keto diet might be difficult. Fortunately, what keto desserts lack in carbs, they make up for in delectable fats, alternative flours, and alternative sources of sweetness such as stevia, erythritol, and fruits such as berries. The sweetening component in this recipe is stevia, and the fat sources are whipped cream and mascarpone.


INGREDIENTS

mascarpone cheese, 1/2 cup

1 tablespoon vanilla extract

20 drops of liquid stevia

1/2 cup of whipping cream

1 cup fresh strawberries, sliced

1 ounce grated stevia-sweetened dark chocolate

Mint leaves


HOW TO MAKE KETO STRAWBERRY MASCARPONE

1. Mascarpone, vanilla, and stevia should be combined in a medium mixing bowl. Mix on low speed until well blended. Add whipping cream and continue to mix on medium speed until thickened and smooth.

2. Divide the cream mixture among four serving glasses. Garnish with strawberries, chocolate shavings, and mint leaves.
