INGREDIENTS
1 pound ground beef
1 cup onion, chopped
1 cup carrots, chopped
1 cup celery, chopped
3 quarts beef broth
1/2 teaspoon paprika
1 quart thick cream
a half-cup sour cream
1 cup shredded cheddar cheese
fresh parsley, chopped
Crumbled bacon
HOW TO MAKE KETO CHEESEBURGER SOUP
1. Turn on the Instant Pot's Sauté mode. Cook the ground beef in the Instant Pot once it's warmed up. Excess grease should be drained into a container.
2. Cook for 1 minute after adding the onions. Then combine the carrots, celery, beef broth, and paprika in a mixing bowl.
3. Replace the lid and set the Instant Pot to manual (Pressure Cook). Cook for 5 minutes under high pressure, then seal the lid.
4. When the timer goes off, let the pot depressurize for 10 minutes before releasing the remaining pressure.
5. Return to the Sauté setting and stir in the heavy cream, cheddar cheese, and sour cream. Stir until thoroughly blended and warmed.
6. Scoop into serving bowls and garnish with bacon bits, parsley, and more cheddar cheese, if preferred.
