Guacamole is the ideal keto dip since it is full in beneficial fats from heart-healthy avocados. While typical tortilla chips aren't keto-friendly, I like to use parmesan crisps or pork rinds as a crunchy guac vessel. While the larger avocado bits give this recipe some body, you can fully smooth it out with an immersion blender.
INGREDIENTS
2 1/2 avocados, ripe
2 tablespoons full-fat sour cream
lime juice (1/2 lime)
1/2 tsp minced garlic
1 teaspoon kosher salt
black pepper, freshly ground
3 tablespoons cilantro, chopped
2 tablespoons red onion, finely chopped
To serve, parmesan crisps
HOW TO MAKE GUACAMOLE AND CHEESE CRISPS
1.Place the avocado cubes in a large mixing dish. Combine the sour cream, lime, garlic, salt, and pepper in a mixing bowl. Mash with a fork, but leave some chunks.
2. Stir in the red onion and cilantro to mix.
3. Serve alongside the crisps.
