Every year, millions of pounds of Buffalo wings are consumed in the United States. Aside from being messy, those wings all had one thing in common: they spent a long time in the deep fryer. This approach doubles the calories in an already fatty cut of chicken. Grilling or oven-roasting your wings, on the other hand, dramatically reduces fat; it's also easier, less expensive (no quart of oil for frying), and (particularly on the grill) tastier.
INGREDIENTS
2 pound chicken wings (preferably a mix of wing segments and drummettes).
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon chili powder
2 tablespoons butter
2 tablespoons spicy sauce
Lemon juice (one lemon)
1 cup Greek-style plain yogurt
2 tablespoons crumbled blue cheese
Salt and black pepper to taste.
Sticks of celery (optional).
HOW TO MAKE BAKED BUFFALO WINGS
1. Preheat the oven to 450 degrees F. Arrange the chicken on a baking sheet and season with salt, pepper, and chili powder.
2. Roast for 15 minutes, or until the skin is lightly blistered and the flesh is cooked through.
3. In a large nonstick skillet or sauté pan, melt the butter and add the spicy sauce and half of the lemon juice.
4. Remove the wings from the oven and toss them in the hot pan to fully coat each piece in the sauce.
5. Combine the yogurt, blue cheese, and remaining lemon juice in a mixing bowl.
6. Season with salt and pepper to taste.
7. Serve the wings and celery (if using) alongside the blue cheese sauce for dipping.
